    Shi Ru, or “Rock’s Milk” oolong shows off the rocky flavor of Wuyishan like nothing else. This meticulously hand-finished special grade offering has such a creamy, cooling soft minerality, with notes of muscat grape, plantain, salty molasses, oat cakes, spearmint and elderflower. The Li Family's special grade designation is serious business - they have a reputation as community leaders and award-winners in Wuyishan, so they only designate a special grade when it is given dozens of hours of extra hand firing over low temperatures, and up to an extra 6 rounds of fluffing and turning over an extra 18 hours as needed to bring out the most aromatics possible
