Aging brings out deep, rich complexity through oxidative processes, hydrolysis and other non-fermentation reactions. This complexity builds on the already impressive flavor and texture that the Wu Family has to offer from their mountaintop wild plot harvest, carefully selected from bushes that have grown without trimming or intervention for over a generation.
