Da BaiTea Varietal

Bai Hao Yin Zhen is picked entirely from early spring buds, with almost no leaf at all. The result is extremely sweet and thick, with a light flavor but a lingering deep aftertaste and aroma. The Wu Family was kind enough to share some of the 2017 wild-picked Bai Hao Yin Zhen they set aside for aging. Even a single year has added depth and complexity to the tea we didn’t taste in the fresh harvest. This picking was set aside specifically from plot #1 on the Wu family’s wild and untended high mountain tea garden. The biodiversity of the Wu Family’s multi-generational tea garden, left untended for decades, yields tea with rich flavor - the plant's response to competition from other plants and insects. The result is a silver needle with the refined delicate nature of the Chinese ideal profile, but with the backbone suitable for aging into an even deeper, richer tea.
