Da BaiTea Varietal

The Wu Family's Shou Mei is picked from mature wild-arbor Da Bai varietal tea bushes on their high-elevation biodiverse plot. Their generously downy Shou Mei is a combination of young leaves and buds. Aging white tea brings out deep, rich complexity through oxidative processes, hydrolysis and other non-fermentation reactions. These take the fresh, vibrant side of white tea and temper it with deep chocolate notes. This tea is already developing a subtle cooling medicinal flavor to complement fresh tangerine and soft florals.
