Mr. Wu sets aside the promising white tea harvests each year for their long term aging potential, including this lovely 2018 picking of the family’s wild plot Bai Mudan, harvested from old-growth tea bushes on a remote, biodiverse and beautifully-forested mountainside. This bud-heavy Bai Mudan was aged loose for two years to gain depth and complexity, and then gently steamed and pressed into a loose-compression cake for aging. The result is deep, nuanced, and full of lingering aftertaste. This 300g cake is delicious now, or set for even more growth in textural nuance over the years.
